Ingredients

6 oz (170g) spaghetti or bucatini2 turkey egg yolks (or 1 whole + 1 yolk)
1/2 cup grated Parmesan or Pecorino Romano4 oz pancetta or thick-cut bacon, diced
2 cloves garlic, crushed (optional)Salt & freshly ground black pepper
Reserved pasta water (about 1/2 cup)

Directions

  • Cook pasta in salted water until al dente. Reserve some pasta water before draining.
  • In a bowl, whisk turkey egg yolks and cheese until smooth. Add a bit of pepper.
  • In a skillet, cook pancetta until crispy. Add garlic for 1 min if using, then remove from heat.
  • Toss hot pasta into the skillet with pancetta (off heat). Quickly stir in the egg mixture, mixing vigorously.
  • Add pasta water a splash at a time to create a creamy sauce—aim for silky, not scrambled.
  • Serve immediately, topped with more cheese and cracked pepper.

Tip: Turkey yolks are extra rich, so this version is creamier than traditional carbonara—no cream needed!
