Ingredients
| 6 oz (170g) spaghetti or bucatini | 2 turkey egg yolks (or 1 whole + 1 yolk) |
| 1/2 cup grated Parmesan or Pecorino Romano | 4 oz pancetta or thick-cut bacon, diced |
| 2 cloves garlic, crushed (optional) | Salt & freshly ground black pepper |
| Reserved pasta water (about 1/2 cup) | |
Directions
- Cook pasta in salted water until al dente. Reserve some pasta water before draining.
- In a bowl, whisk turkey egg yolks and cheese until smooth. Add a bit of pepper.
- In a skillet, cook pancetta until crispy. Add garlic for 1 min if using, then remove from heat.
- Toss hot pasta into the skillet with pancetta (off heat). Quickly stir in the egg mixture, mixing vigorously.
- Add pasta water a splash at a time to create a creamy sauce—aim for silky, not scrambled.
- Serve immediately, topped with more cheese and cracked pepper.
Tip: Turkey yolks are extra rich, so this version is creamier than traditional carbonara—no cream needed!
